Ingredients
1 large delicata squash
1 medium red onion, sliced
2 tablespoons olive oil, divided
2 tablespoons pure maple syrup
1 teaspoon of chili powder
1 teaspoon of garlic powder
Salt and pepper, to taste
2 tablespoons of cranberry goat cheese (optional)
Fresh thyme or rosemary (optional, for garnish)
Directions
- Preheat your oven to 450°F (232°C).
- Slice the delicata squash in half lengthwise and scoop out the seeds. Cut them into half-moon shapes, about 1/2 inch thick.
- In a large mixing bowl, toss the squash and sliced onion with 1 tablespoon of olive oil, salt, pepper, chilli and garlic powder
- Spread the mixture in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway through, until the squash and onion are tender.
- Remove from the oven and let cool slightly. Combine the remaining 1 tablespoon oil, rosemary, syrup, and cranberry goat cheese to the roasted squash and onion.
